Macadamia-crusted Chicken

When I was first asked to cater a Hawaiian party, I was a bit reluctant. I’ve never been to Hawaii, and all I could imagine (aside from golden surfer dudes) was mangos and pineapples. Researching the matter scared me even more, as all I could find was recipes with heaps of meat, preferably fried… Two things I’m not big friends with.

So I decided to take a deep breath, reminded myself what I’m all about, and approached the matter again. I went back to my 21st century drawing board, also known as Pinterest. After searching long and hard, and with the help of specific request by the customer, I’ve come up with a menu no one sane can refuse. I did play around with these recipes a bit, but everything was based on the following:

The Menu:
Hawaiian Sweet Potato Salad
Pineapple Cucumber Lime Salad

Hawaiian Shrimp Truck Special: Garlic Lemon Butter Shrimp and Grilled Pineapple Served on Coconut Rice.

– Mira’s Favorite: Macadamia-Crusted Chicken and Mango Salsa, served on Coconut Rice.

Hawaiian Vegan: Pineapple Fried Quinoa with Sautéed Tofu and Shiitake Mushrooms, and Tahini Pineapple and Mint dressing.

We had to drop the first salad and first main, due to the customer’s budget, but still had a beautiful meal everyone enjoyed!
